24 Jun Recipe: Energy Balls
Let’s be real guys, we know there’s nothing better than having healthy snacks on hand at all times. This month we’re sharing one of our favourite snacks created by our friend Chef and Food Stylist Blake Mackay. Some of you had the chance to taste these on our 6 Mile Lake Retreat and asked for the recipe, so here it is. Enjoy and share the love guys.
- 500g pitted dates, chopped
- 2 cups almonds
- ½ cup hemp seeds
- ½ cup sesame seeds
- 1 cup tahini
- 3 tablespoons candied ginger, chopped
- 2 tablespoons fennel seeds
- 2 tablespoons coriander seeds
- Zest of 1 lemon
- Zest of 1 orange
In the bowl of a food processor coarsely grind the almonds along with the fennel seeds, coriander seeds, ginger and zests. Once you have obtained something that looks like really coarse sand pour it into a bowl add the hemp and sesame seeds and put it aside.
Next the dates and tahini get together in the food processor until the obtention of a smooth and creamy dreamy texture.
Add the nut and seeds combo into the mix and pulse until it looks like a shaggy paste.
Form into balls and roll in nuts/seeds/grains/spices/coconut if you desire to do so, otherwise refrigerate your round friends and eat them as you will.
